- (1/2 cups) milk
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1 cup) shredded cheese (cheddar or your choice)
- (1 cup) cooked and crumbled sausage or diced ham (optional)
- (1 cup) diced bell peppers (any color)
- (1 cup) diced onions
- (4) large flour tortillas
- (1/4 cups) salsa (optional, for serving)

In a large bowl, whisk together 8 large eggs, 1/2 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.

In a skillet over medium heat, add 1 cup diced onions and 1 cup diced bell peppers. Sauté for about 5 minutes, until softened.

Add the egg mixture to the skillet with the veggies. Cook, stirring gently, until the eggs are fully cooked, about 5-7 minutes.

If using, stir in 1 cup cooked and crumbled sausage or diced ham and 1 cup shredded cheese until the cheese melts and everything is heated through.

Remove from heat and let the mixture cool slightly.

Lay out 4 large flour tortillas on a clean surface. Divide the egg mixture evenly among the tortillas, placing it in the center of each.
