Ingredients

- (4) flour tortillas
- (1 cup) shredded cheese (cheddar or mozzarella)
- (1) bell pepper, diced
- (1) zucchini, diced
- (1) onion, diced
- (2 cloves) garlic, minced
- (1 cup) corn (fresh or frozen)
- (1) tomato, diced
- (1 tsp) cumin
- (1 tsp) chili powder
- (2 tbsp) olive oil
- (1/2 tsp) salt
- (1/4 tsp) black pepper

Heat (2 tbsp) olive oil in a large skillet over medium heat.

Add (1) diced onion and (2 cloves) minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

Add (1) diced bell pepper, (1) diced zucchini, and (1 cup) corn to the skillet. Cook for another 5-7 minutes until the vegetables are tender.

Stir in (1) diced tomato, (1 tsp) cumin, (1 tsp) chili powder, (1/2 tsp) salt, and (1/4 tsp) black pepper. Cook for an additional 2 minutes until well combined.

Remove the veggie mixture from the heat and set aside.

In a separate skillet, heat a tortilla over medium heat. Sprinkle (1/4 cup) shredded cheese on one half of the tortilla.

Add (1/4 of the veggie mixture) on top of the cheese, then fold the tortilla in half over the filling.

Cook for about 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown. Repeat with remaining tortillas and filling.
