Loaded Potato Soup

Ingredients

- (4) medium russet potatoes
- (1) medium onion
- (2 cloves) garlic
- (4 cups) chicken broth
- (1 cup) heavy cream
- (1 cup) shredded cheddar cheese
- (1/2 cups) cooked bacon, crumbled
- (1/4 cups) green onions, chopped
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1/2 teaspoons) paprika
- (2 tablespoons) olive oil
Instructions

Peel and dice the 4 medium russet potatoes into small cubes.

Chop 1 medium onion and mince 2 cloves garlic.

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.

Add the minced garlic and sauté for an additional 1 minute until fragrant.

Stir in the diced potatoes, 4 cups of chicken broth, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of paprika. Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.

Using a potato masher or immersion blender, mash or blend the soup to your desired consistency (smooth or chunky).

Stir in 1 cup of heavy cream and heat through for another 5 minutes.
