Lemon Parmesan Garlic Roasted Asparagus

Ingredients

- (1 lb) asparagus, trimmed
- (3 tbsp) olive oil
- (2 cloves) garlic, minced
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/2 cups) grated Parmesan cheese
- (1) lemon, zested and juiced
- (1/4 tsp) red pepper flakes (optional)

Preheat the oven to 400°F (200 °C).

In a large bowl, combine 3 tbsp olive oil, 2 cloves minced garlic, 1/2 tsp salt, 1/4 tsp black pepper, and the zest of 1 lemon. Add 2/4 tsp salt and 1/4 tsp red pepper flakes (optional).

Add the trimmed asparagus to the bowl and toss to coat evenly with the oil and seasoning mixture.

Spread the asparagus in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 15-20 minutes, or until the asparagus is tender and slightly crispy.

Remove the asparagus from the oven and drizzle with the juice of 1 lemon.

Sprinkle 1/2 cup grated Parmesan cheese over the asparagus, and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
