- (1/4 cups) olive oil
- (1 tablespoon) lemon juice
- (1 teaspoon) lemon zest
- (2 teaspoons) dried oregano
- (2 teaspoons) dried thyme
- (1 teaspoon) garlic powder
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (2 tablespoons) fresh parsley, chopped

Preheat the oven to 425°F (220 °C).

Wash and scrub the 4 medium potatoes, then cut them into wedges.

In a large bowl, combine 1/4 cup olive oil, 1 tablespoon lemon juice, 1 teaspoon lemon zest, 2 teaspoons dried oregano, 2 teaspoons dried thyme, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Add 2/4 teaspoon black pepper.

Add the potato wedges to the bowl and toss until they are well coated with the herb mixture.

Spread the coated potato wedges in a single layer on a baking sheet lined with parchment paper.
