Lemon Herb Grilled Chicken Salad

Ingredients

- (4) boneless, skinless chicken breasts
- (1/4 cups) olive oil
- (1/4 cups) fresh lemon juice
- (2 tablespoons) fresh parsley, chopped
- (2 tablespoons) fresh basil, chopped
- (1 teaspoon) garlic powder
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (8 cups) mixed salad greens
- (1 cup) cherry tomatoes, halved
- (1/2) cucumber, sliced
- (1/2) red onion, thinly sliced

In a bowl, mix together 1/4 cup olive oil, 1/4 cup fresh lemon juice, 2 tablespoons chopped parsley, 2 tablespoons chopped basil, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper to create the marinade.

Place 4 boneless, skinless chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes.

Preheat the grill to medium-high heat.

Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75 °C). Remove from grill and let rest for 5 minutes before slicing.

In a large bowl, combine 8 cups mixed salad greens, 1 cup halved cherry tomatoes, 1/2 sliced cucumber, and 1/4 thinly sliced red onion.

Slice the grilled chicken and place it on top of the salad mixture. Drizzle with additional olive oil and lemon juice if desired, and toss gently before serving.
