Lemon Herb Chicken and Green Beans

Ingredients
Yields 4 servings
- (4) chicken breasts
- (1) lemon
- (2 tbsp) olive oil
- (1 tbsp) fresh thyme (or 1 tsp dried)
- (1 tbsp) fresh rosemary (or 1 tsp dried)
- (2 cloves) garlic
- (1/2 tsp) salt
- (1/2 tsp) pepper
- (1 lb) fresh green beans
- (1/4 tsp) red pepper flakes (optional)

Zest and juice the (1) lemon, reserving the zest for later.

In a bowl, mix the (2 tbsp) olive oil, (1 tbsp) lemon juice, (1 tbsp) thyme, (1 tbsp) rosemary, (2 cloves) minced garlic, (1/2 tsp) salt, and (1/2 tsp) pepper to create a marinade.

Place the (4) chicken breasts in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes or up to 2 hours for best flavor.

While the chicken is marinating, prepare the green beans by trimming the ends and rinsing them under cold water.

In a large skillet, heat a splash of olive oil over medium heat. Add the (1 lb) green beans, season with (1/4 tsp) red pepper flakes if using, and sauté for about 5-7 minutes until tender and bright green. Remove from skillet and set aside.

Once the chicken has marinated, heat the skillet over medium-high heat. Add the marinated chicken breasts and cook for 6-7 minutes on each side or until the chicken is cooked through and has a nice golden color.

Remove the chicken from the skillet and let it rest for a few minutes before slicing.

Serve the sliced chicken over a bed of sautéed green beans, drizzling any remaining lemon juice and zest on top.
