Lemon Herb Chicken and Broccoli

- (1/4 cups) olive oil
- (2) lemons (juiced)
- (4 cloves) garlic (minced)
- (2 teaspoons) dried oregano
- (1 teaspoon) dried thyme
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (4 cups) broccoli florets
- (1/4 cups) grated Parmesan cheese

In a bowl, combine 1/4 cup olive oil, juice of 2 lemons, 4 cloves minced garlic, 2 teaspoons dried oregano, 1 teaspoon dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix well to create a marinade.

Place 4 chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes, up to 1 hour.

Preheat the oven to 400°F (200 °C). Line a baking sheet with parchment paper.

Remove the chicken from the marinade and place it on the prepared baking sheet. Discard the remaining marinade.

Arrange 4 cups of broccoli florets around the chicken on the baking sheet. Drizzle with a little olive oil and sprinkle with salt and pepper to taste.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75 °C).

Remove the baking sheet from the oven and sprinkle 1/4 cup grated Parmesan cheese over the chicken and broccoli. Return to the oven for an additional 5 minutes to melt the cheese.
