Lemon Garlic Tuna Pasta

Ingredients
Yields 4 servings
- (12 oz) pasta (spaghetti or linguine)
- (2 tbsp) olive oil
- (4 cloves) garlic, minced
- (1 can) (15 oz) tuna in olive oil, drained
- (1/2 tsp) red pepper flakes
- (1) lemon, zested and juiced
- (1/2 cups) cherry tomatoes, halved
- (1/4 cups) fresh parsley, chopped
- Salt to taste
- Pepper to taste
- (1/4 cups) grated Parmesan cheese (optional)

In a large pot, bring salted water to a boil and cook 12 oz pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

In the same pot, heat 2 tbsp olive oil over medium heat. Add 4 cloves of minced garlic and sauté for about 1 minute until fragrant.

Add 1 can of drained tuna and 1/2 tsp red pepper flakes to the pot, stirring to combine and heat through for about 2 minutes.

Stir in the zest and juice of 1 lemon, followed by 1/2 cup of halved cherry tomatoes. Cook for another 2-3 minutes until the tomatoes start to soften.

Return the cooked pasta to the pot, adding reserved pasta water as needed to create a light sauce. Toss everything together.

Season with salt and pepper to taste, and mix in 1/4 cup of chopped fresh parsley before serving.

Serve hot, topped with 1/4 cup of grated Parmesan cheese if desired.
