Lemon Garlic Chicken Pasta

Ingredients
Yields 4 servings
- (8 oz) spaghetti pasta
- (2) chicken breasts, boneless and skinless
- (4 tbsp) olive oil
- (3 cloves) garlic, minced
- (1) lemon, zested and juiced
- (1/2 tsp) salt
- (1/2 tsp) black pepper
- (1/4 tsp) crushed red pepper flakes
- (1/4 cups) fresh parsley, chopped
- (1/4 cups) grated parmesan cheese, for serving

Cook the spaghetti pasta according to package instructions until al dente, then drain and set aside.

While the pasta is cooking, season both sides of the (2) chicken breasts with (1/2 tsp) salt and (1/2 tsp) black pepper.

In a large skillet over medium heat, add (2 tbsp) olive oil. Once hot, add the seasoned chicken and cook for about 6-7 minutes on each side, or until fully cooked. Remove from skillet and let rest for a few minutes before slicing into strips.

In the same skillet, add the remaining (2 tbsp) olive oil and (3 cloves) minced garlic. Sauté for 1-2 minutes, or until fragrant, being careful not to burn the garlic.

Add the cooked spaghetti to the skillet along with the sliced chicken, (1 lemon) zest, (1/4 cup) lemon juice, and (1/4 tsp) crushed red pepper flakes. Toss everything together until well combined and heated through, about 2-3 minutes.

Remove from heat and stir in (1/4 cup) fresh parsley. Serve the pasta warm, topped with (1/4 cup) grated parmesan cheese.
