Lemon Garlic Chicken and Asparagus

- (4) boneless, skinless chicken breasts
- (1/4 cups) olive oil
- (3 tablespoons) lemon juice
- (4 cloves) garlic, minced
- (1 teaspoon) dried oregano
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1 pound) asparagus, trimmed
- (1) lemon, sliced for garnish
- (2 tablespoons) fresh parsley, chopped for garnish

In a medium bowl, whisk together 1/4 cup olive oil, 3 tablespoons lemon juice, 4 cloves minced garlic, 1 teaspoon dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper to create the marinade.

Place the 4 chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours.

Preheat your oven to 400°F (200 °C).

On a large baking sheet, arrange the marinated chicken breasts in the center. Place the trimmed 1 pound of asparagus around the chicken.

Drizzle any remaining marinade over the asparagus. Toss the asparagus lightly to coat.

Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75 °C) and the asparagus is tender.
