Servings4

Yields 4 servings

  • (1 1/2 cups) graham cracker crumbs
  • (1/4 cups) granulated sugar
  • (1/2 cups) unsalted butter, melted
  • (16 oz) cream cheese, softened
  • (1 cup) granulated sugar
  • (3) large eggs
  • (1/4 cups) fresh lemon juice
  • (1 tablespoon) lemon zest
  • (1 teaspoon) vanilla extract
  • (1 cup) fresh blueberries

Instructions

  1. 1

    Preheat the oven to 350°F (175 °C).

  2. 2

In a medium bowl, combine 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter. Mix until well combined.

  3. 3

Press the graham cracker mixture firmly into the bottom of a 9x9-inch baking pan to form the crust. Bake in the preheated oven for 10 minutes, then remove and let cool slightly.

  4. 4

In a large mixing bowl, beat together 16 oz softened cream cheese and 1 cup granulated sugar until smooth and creamy.

  5. 5

Add 3 large eggs, one at a time, mixing well after each addition. Then mix in 1/4 cup fresh lemon juice, 1 tablespoon lemon zest, and 1 teaspoon vanilla extract until fully combined.

  6. 6

Gently fold in 1 cup fresh blueberries into the cheesecake mixture.

  7. 7

Pour the cheesecake mixture over the cooled crust and spread it evenly.

  8. 8

Bake in the oven for 25-30 minutes, or until the center is set and slightly jiggles when moved.

  9. 9

Remove from the oven and let cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before cutting into bars.
