Lemon Bars

Ingredients
Yields 4 servings
- (1 cup) all-purpose flour
- (1/4 cups) powdered sugar
- (1/2 cups) unsalted butter, softened
- (1/2 cups) granulated sugar
- (2) large eggs
- (1/4 cups) fresh lemon juice
- (1 tablespoon) lemon zest
- (1/2 teaspoons) baking powder
- (1/4 teaspoons) salt
- additional powdered sugar for dusting

Preheat the oven to 350°F (175 °C).

In a medium bowl, combine 1 cup all-purpose flour and 1/4 cup powdered sugar.

Add 1/2 cup softened unsalted butter to the flour mixture and mix until crumbly.

Press the mixture into the bottom of an 8-inch square baking dish to form the crust.

Bake the crust in the preheated oven for 15 minutes or until lightly golden.

In a separate bowl, whisk together 1/2 cup granulated sugar, 2 large eggs, 1/4 cup fresh lemon juice, 1 tablespoon lemon zest, 1/2 teaspoon baking powder, and 1/4 teaspoon salt until smooth.

Pour the lemon mixture over the baked crust and return to the oven.
