Lasagna Soup

Ingredients
Yields 4 servings
- (1 tablespoon) olive oil
- (1) medium onion, diced
- (2 cloves) garlic, minced
- (1 pound) ground beef
- (1 teaspoon) dried oregano
- (1 teaspoon) dried basil
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1) (28-ounce) can crushed tomatoes
- (4 cups) beef broth
- (8 ounces) lasagna noodles, broken into pieces
- (1 cup) ricotta cheese
- (1 cup) shredded mozzarella cheese
- (1/4 cups) grated Parmesan cheese
- (1/4 cups) fresh basil, chopped (for garnish)

In a large pot, heat 1 tablespoon of olive oil over medium heat.

Add 1 medium diced onion and sauté until translucent, about 5 minutes.

Stir in 2 minced garlic cloves and cook for 1 minute until fragrant.

Add 1 pound of ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.

Season with 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir well.

Pour in 1 (28 -ounce) can of crushed tomatoes and 4 cups of beef broth. Bring to a simmer.

Once simmering, add 8 ounces of broken lasagna noodles and cook according to package instructions, about 10-12 minutes, until noodles are tender.

In a bowl, combine 1 cup of ricotta cheese, 1 cup of shredded mozzarella cheese, and 1/4 cup of grated Parmesan cheese. Stir until well mixed.

Ladle the soup into bowls and add a spoonful of the cheese mixture on top of each serving.
