- (2) bell peppers, sliced (1 red, 1 yellow)
- (1) medium onion, sliced
- (2) zucchinis, sliced
- (1 cup) cherry tomatoes, halved
- (3 cloves) garlic, minced
- (2 tbsp) olive oil
- (1 tsp) dried oregano
- (1 tsp) dried basil
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) grated Parmesan cheese (optional)

Preheat the oven to 400°F (200 °C).

In a large mixing bowl, combine 1 lb sliced Italian sausage, 2 sliced bell peppers, 1 sliced onion, 2 sliced zucchinis, 1 cup halved cherry tomatoes, and 3 minced garlic cloves.

Drizzle with 2 tbsp olive oil and season with 1 tsp dried oregano, 1 tsp dried basil, 1/2 tsp salt, and 1/4 tsp black pepper. Toss to coat all ingredients evenly.

Transfer the mixture to a large baking dish, spreading it out evenly.

Bake in the preheated oven for 30-35 minutes, or until the sausage is cooked through and the vegetables are tender.

If desired, sprinkle 1/4 cup grated Parmesan cheese over the top and return to the oven for an additional 5 minutes until melted.
