Ingredients

- (1 lb) boneless, skinless chicken breasts
- (1 cup) long-grain white rice
- (2 cups) low-sodium chicken broth
- (1) medium onion, diced
- (3 cloves) garlic, minced
- (1 cup) cherry tomatoes, halved
- (1) medium zucchini, diced
- (1) medium bell pepper, diced
- (1 teaspoon) dried Italian herbs
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1/4 cups) fresh basil, chopped
- (1 tablespoon) olive oil

Set the Instant Pot to 'Sauté' mode and add 1 tablespoon olive oil.

Add 1 medium onion, diced, and sauté for 3-4 minutes until translucent.

Stir in 3 cloves garlic, minced, and cook for an additional 1 minute until fragrant. Add 2/4 teaspoon black pepper.

Add 1 lb boneless, skinless chicken breasts, 1 teaspoon salt, and 1/2 teaspoon black pepper. Sauté for 5 minutes, stirring occasionally.

Add 1 cup long-grain white rice, 2 cups low-sodium chicken broth, 1 teaspoon dried Italian herbs, 1 cup cherry tomatoes, halved, 1 medium zucchini, diced, and 1 medium bell pepper, diced. Stir to combine.

Close the lid of the Instant Pot and set to 'Manual' mode for 10 minutes on high pressure.

Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
