  • (1 lb) boneless, skinless chicken breasts
  • (1 tbsp) olive oil
  • (1) small onion, diced
  • (3 cloves) garlic, minced
  • (1 tsp) dried Italian herbs
  • (1/2 tsp) salt
  • (1/4 tsp) black pepper
  • (1 cup) cherry tomatoes, halved
  • (2 cups) fresh spinach
  • (1 cup) heavy cream
  • (1/2 cups) grated Parmesan cheese
  • (1 tbsp) lemon juice
  • (1/4 cups) fresh basil, chopped

Instructions

    Set the Instant Pot to 'Sauté' mode and add 1 tbsp olive oil.

    Once the oil is hot, add 1 small diced onion and sauté until translucent, about 3-4 minutes.

    Add 3 cloves minced garlic, 1 tsp dried Italian herbs, 1/2 tsp salt, and 1/4 tsp black pepper. Sauté for another minute until fragrant.

    Add 1 lb boneless, skinless chicken breasts to the pot, and sear for 2-3 minutes on each side until lightly browned.

    Add 1 cup cherry tomatoes and 1/2 cup water to the pot. Close the lid and set the Instant Pot to 'Manual' for 10 minutes.

    Once the cooking time is complete, allow for a natural pressure release for 5 minutes, then perform a quick release for any remaining pressure.

    Remove the chicken from the pot and set aside. Add 2 cups fresh spinach, 1 cup heavy cream, and 1/2 cup grated Parmesan cheese to the pot. Stir until the spinach wilts and the sauce is creamy. Add 2/4 tsp salt and 1/4 cup fresh basil, chopped.

    Return the chicken to the pot, add 1 tbsp lemon juice, and stir to coat the chicken in the sauce.
