Instant Pot Creamy Garlic Chicken and Rice

Ingredients

- (1 cup) long-grain white rice
- (4 cups) chicken broth
- (1) medium onion, diced
- (4 cloves) garlic, minced
- (1 cup) heavy cream
- (1 tsp) dried thyme
- (1 tsp) dried parsley
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (2 tbsp) olive oil
- (1/2 cups) grated Parmesan cheese
- (1 cup) frozen peas

Set the Instant Pot to 'Sauté' mode and add 2 tbsp olive oil.

Once hot, add 1 medium onion, diced, and sauté for 3-4 minutes until translucent.

Stir in 4 cloves garlic, minced, and cook for an additional 1 minute until fragrant.

Add 1 lb chicken breast, cut into bite-sized pieces, and cook until no longer pink, about 5-6 minutes.

Season with 1 tsp dried thyme, 1 tsp dried parsley, 1/2 tsp salt, and 1/4 tsp black pepper.

Add 1 cup long-grain white rice and stir to combine with the chicken and onion mixture.
