Instant Pot Creamy Chicken and Vegetable Pasta

Ingredients
Yields 4 servings
- (1 lb) chicken breast, diced
- (2 cups) pasta (penne or rotini)
- (1 cup) chicken broth
- (1 cup) heavy cream
- (1 cup) broccoli florets
- (1 cup) bell pepper, diced
- (1 cup) cherry tomatoes, halved
- (1) medium onion, diced
- (3 cloves) garlic, minced
- (1 tsp) Italian seasoning
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) grated Parmesan cheese
- (2 tbsp) olive oil

Set the Instant Pot to sauté mode and add 2 tbsp olive oil. Heat for 2 minutes.

Add 1 medium onion, diced, and sauté for 3-4 minutes until translucent.

Stir in 3 cloves garlic, minced, and sauté for another 1 minute until fragrant.

Add 1 lb chicken breast, diced, and cook until no longer pink, about 5-7 minutes.

Pour in 1 cup chicken broth and scrape the bottom of the pot to deglaze.

Add 2 cups pasta (penne or rotini), 1 cup broccoli florets, 1 cup bell pepper, diced, and 1 cup cherry tomatoes, halved.

Season with 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper. Stir to combine.

Close the lid and set the Instant Pot to manual high pressure for 5 minutes.

Once the cooking time is complete, carefully perform a quick release of the pressure.

Open the lid and stir in 1 cup heavy cream and 1/4 cup grated Parmesan cheese until well combined. Adjust seasoning if necessary.
