  • (1 lb) boneless, skinless chicken breasts
  • (1 cup) orzo pasta
  • (1) medium onion, diced
  • (2 cloves) garlic, minced
  • (1 cup) carrots, sliced
  • (1 cup) zucchini, diced
  • (1 cup) spinach, chopped
  • (4 cups) chicken broth
  • (1 cup) heavy cream
  • (1 tsp) dried thyme
  • (1 tsp) paprika
  • Salt to taste
  • Pepper to taste
  • (2 tbsp) olive oil
  • (1/4 cups) grated Parmesan cheese

Instructions

    Set the Instant Pot to 'Sauté' mode and heat 2 tbsp olive oil.

    Add 1 medium onion, diced, and sauté until translucent, about 3-4 minutes.

    Stir in 2 cloves garlic, minced, and cook for an additional 1 minute until fragrant. Add Salt to taste.

    Add 1 lb boneless, skinless chicken breasts, season with salt and pepper, and brown on both sides for about 3-4 minutes.

    Pour in 4 cups chicken broth and scrape the bottom of the pot to deglaze.

    Add 1 cup orzo pasta, 1 cup carrots, sliced, 1 cup zucchini, diced, 1 tsp dried thyme, and 1 tsp paprika. Stir to combine.

    Close the lid and set the Instant Pot to 'Manual' mode for 6 minutes on high pressure.

    Once the cooking time is complete, allow for a 5-minute natural release, then perform a quick release to release any remaining pressure.

    Open the lid and stir in 1 cup heavy cream and 1/4 cup grated Parmesan cheese until well combined.
