  • (1 1/2 cups) rolled oats
  • (2 cups) almond milk (or any milk of choice)
  • (1/2 teaspoons) vanilla extract
  • (1 teaspoon) baking powder
  • (1/2 teaspoons) cinnamon
  • (1/4 teaspoons) salt
  • (1/2 cups) mixed nuts, chopped (e.g., walnuts, almonds)
  • (1/2 cups) mixed berries (fresh or frozen)
  • (1/4 cups) honey or maple syrup (optional, for sweetness)

Instructions

    In a large bowl, mix together 2 ripe bananas (mashed), 1 1/2 cups rolled oats, 2 cups almond milk, 1/2 teaspoon vanilla extract, 1 teaspoon baking powder, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt until well combined.

    Fold in 1/2 cup chopped mixed nuts and 1/2 cup mixed berries into the oatmeal mixture.

    Grease 4 silicone muffin cups or ramekins with cooking spray and divide the oatmeal mixture evenly among them.

    Add 1 cup of water to the Instant Pot and place the trivet inside. Arrange the filled muffin cups on the trivet.
