- (1 1/2 cups) rolled oats
- (2 cups) almond milk (or any milk of choice)
- (1/2 teaspoons) vanilla extract
- (1 teaspoon) baking powder
- (1/2 teaspoons) cinnamon
- (1/4 teaspoons) salt
- (1/2 cups) mixed nuts, chopped (e.g., walnuts, almonds)
- (1/2 cups) mixed berries (fresh or frozen)
- (1/4 cups) honey or maple syrup (optional, for sweetness)

In a large bowl, mix together 2 ripe bananas (mashed), 1 1/2 cups rolled oats, 2 cups almond milk, 1/2 teaspoon vanilla extract, 1 teaspoon baking powder, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt until well combined.

Fold in 1/2 cup chopped mixed nuts and 1/2 cup mixed berries into the oatmeal mixture.

Grease 4 silicone muffin cups or ramekins with cooking spray and divide the oatmeal mixture evenly among them.

Add 1 cup of water to the Instant Pot and place the trivet inside. Arrange the filled muffin cups on the trivet.

Seal the Instant Pot lid and set it to cook on high pressure for 15 minutes.

Once the cooking time is up, allow for a natural release for 10 minutes, then carefully perform a quick release to release any remaining pressure.
