Honey Soy Glazed Salmon with Rice and Broccoli

Ingredients
Yields 4 servings
- (4) salmon fillets
- (1/4 cups) honey
- (1/4 cups) soy sauce
- (2 tbsp) rice vinegar
- (1 tbsp) minced garlic
- (1 tbsp) minced ginger
- (2 cups) jasmine rice
- (4 cups) water
- (2 cups) broccoli florets
- (1 tbsp) sesame oil
- (1/2 tsp) black pepper
- (1) green onion, sliced for garnish

In a small bowl, whisk together (1/4 cup) honey, (1/4 cup) soy sauce, (2 tbsp) rice vinegar, (1 tbsp) minced garlic, and (1 tbsp) minced ginger to create the glaze.

Preheat the oven to 375°F (190 °C).

Place the (4) salmon fillets on a baking sheet lined with parchment paper and season with (1/2 tsp) black pepper.

Brush the glaze generously over the salmon fillets, reserving some for later.

Bake the salmon in the preheated oven for 15-20 minutes or until cooked through and flaky.

While the salmon is baking, rinse the (2 cups) jasmine rice under cold water until the water runs clear. Combine the rinsed rice and (4 cups) water in a medium saucepan and bring to a boil.

Once boiling, reduce heat to low, cover, and cook for 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork when done.

In a steamer or saucepan, steam the (2 cups) broccoli florets for about 5-7 minutes until bright green and tender.

Drizzle the steamed broccoli with (1 tbsp) sesame oil and toss to coat.

To serve, place a scoop of rice on each plate, add a salmon fillet on top, drizzle with remaining glaze, and serve with steamed broccoli.
