- (4) bone-in chicken thighs
- (1/4 cups) honey
- (1/4 cups) Dijon mustard
- (2 tbsp) apple cider vinegar
- (1 tbsp) olive oil
- (1 lb) Brussels sprouts
- (1 tsp) garlic powder
- (1 tsp) onion powder
- (1/2 tsp) black pepper
- (1/2 tsp) salt

Preheat your oven to 400°F (200 °C).

In a mixing bowl, combine (1/4 cup) honey, (1/4 cup) Dijon mustard, and (2 tbsp) apple cider vinegar. Whisk until well blended to create the glaze.

Place the (4) chicken thighs in a baking dish and pour half of the honey mustard mixture over them. Make sure each thigh is well coated.

In another bowl, trim and halve (1 lb) Brussels sprouts and toss them with (1 tbsp) olive oil, (1 tsp) garlic powder, (1 tsp) onion powder, (1/2 tsp) salt, and (1/2 tsp) black pepper.

Spread the seasoned Brussels sprouts around the chicken thighs in the baking dish.

Bake in the preheated oven for about 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (74 °C) and the Brussels sprouts are golden and crispy on the edges.

Once done, remove from the oven and brush the remaining honey mustard glaze over the chicken thighs before serving.
