Honey Garlic Glazed Pork Chops with Sautéed Veggies

- (4) bone-in pork chops
- (1/2 cups) honey
- (4 cloves) garlic, minced
- (1/4 cups) soy sauce
- (2 tbsp) olive oil
- (1) bell pepper, sliced
- (1) zucchini, sliced
- (1) carrot, julienned
- (1/2 tsp) black pepper
- (1/2 tsp) dried thyme
- (1 tablespoon) chopped fresh parsley, for garnish

In a bowl, combine (1/2 cup) honey, (4 cloves) minced garlic, and (1/4 cup) soy sauce to create the marinade.

Place the (4) pork chops in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes, turning occasionally.

Heat (2 tbsp) olive oil in a large skillet over medium-high heat.

Remove pork chops from marinade, reserving the marinade for later. Add the pork chops to the heated skillet.

Cook the pork chops for about 5-6 minutes on each side until they are browned and cooked through, reaching an internal temperature of 145°F (63 °C).

Once cooked, remove the pork chops and let them rest for 5 minutes.

In the same skillet, add (1) sliced bell pepper, (1) sliced zucchini, and (1) julienned carrot. Season with (1/2 tsp) black pepper and (1/2 tsp) dried thyme.

Sauté the vegetables for about 5-7 minutes until they are tender but still crisp.

Pour the reserved marinade into the skillet with the vegetables and simmer for 2 minutes to thicken slightly.
