  • (4) chicken breasts
  • (1/4 cups) honey
  • (1/4 cups) soy sauce
  • (4 cloves) garlic, minced
  • (1 tablespoon) olive oil
  • (1 pound) asparagus, trimmed
  • (2 cups) jasmine rice
  • (4 cups) water
  • (1 teaspoon) salt
  • (1/2 teaspoons) black pepper
  • (1 tablespoon) sesame seeds (optional)

    In a medium bowl, whisk together 1/4 cup honey, 1/4 cup soy sauce, and 4 cloves minced garlic. Set aside. Add 2/4 teaspoon black pepper.

    Season 4 chicken breasts with 1/2 teaspoon black pepper and 1 teaspoon salt.

    In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.

    Pour the honey garlic mixture over the chicken in the skillet. Let it simmer for 5 minutes, turning the chicken to coat it in the sauce.

    While the chicken is cooking, rinse 2 cups jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice, 4 cups water, and 1 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.

    In the last 5 minutes of cooking the chicken, add 1 pound of trimmed asparagus to the skillet. Cook until the asparagus is tender but still crisp, about 5 minutes.

    Once the rice is done, fluff it with a fork and serve it on plates. Top with the honey garlic chicken and asparagus. Drizzle extra sauce from the skillet over the top and sprinkle with sesame seeds if desired.
