Honey Garlic Chicken Thighs with Rice

- (4) chicken thighs
- (1 cup) rice
- (2 cups) chicken broth
- (4 tbsp) honey
- (4 tbsp) soy sauce
- (3 cloves) garlic
- (1) onion
- (1 tbsp) vegetable oil
- (1/2 tsp) black pepper
- (2) green onions (for garnish)

In a medium pot, combine (1 cup) rice and (2 cups) chicken broth. Bring to a boil, then reduce to low heat, cover, and simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed.

While the rice is cooking, prepare the chicken thighs. Pat them dry with paper towels and season both sides with (1/2 tsp) black pepper.

In a large skillet, heat (1 tbsp) vegetable oil over medium-high heat. Add the chicken thighs skin-side down and cook for about 5-7 minutes until browned.

Flip the chicken thighs over and cook for an additional 5-7 minutes on the other side.

While the chicken is cooking, finely chop (3 cloves) garlic and dice (1) onion.

Once the chicken is browned, add the diced onion to the skillet and sauté for 3-4 minutes until softened. Then, add the chopped garlic and cook for an additional minute until fragrant.

Reduce the heat to medium and add (4 tbsp) honey and (4 tbsp) soy sauce. Stir to coat the chicken thighs evenly in the sauce.

Cover the skillet and let the chicken thighs simmer in the sauce for about 15 minutes until fully cooked through (internal temperature should reach 165°F).

Once the chicken is cooked, remove from heat and let it rest for a few minutes before slicing.

Fluff the cooked rice with a fork and serve it on plates. Top with the sliced honey garlic chicken thighs and drizzle with extra sauce if desired. Garnish with (2) chopped green onions.
