Servings4

Yields 4 servings

  • (1 lb) chicken breast, sliced into thin strips
  • (1/4 cups) honey
  • (1/4 cups) soy sauce
  • (2 tablespoons) vegetable oil
  • (1) bell pepper, sliced
  • (1 cup) broccoli florets
  • (1 cup) snap peas
  • (2) carrots, sliced
  • (3 cloves) garlic, minced
  • (1 tablespoon) fresh ginger, minced
  • (1 tablespoon) cornstarch
  • (1/4 cups) water
  • Salt to taste
  • Pepper to taste
  • Cooked rice for serving

Instructions

  1. 1

In a small bowl, mix 1/4 cup honey, 1/4 cup soy sauce, 1 tablespoon cornstarch, and 1/4 cup water until well combined. Set aside.

  2. 2

Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat.

  3. 3

Add the sliced chicken breast (1 lb) to the skillet and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.

  4. 4

Add minced garlic (3 cloves) and minced ginger (1 tablespoon) to the skillet, stirring for about 1 minute until fragrant.

  5. 5

Stir in the sliced bell pepper (1), broccoli florets (1 cup), snap peas (1 cup), and sliced carrots (2). Cook for an additional 5-6 minutes, or until the vegetables are tender-crisp.

  6. 6

Pour the honey-soy sauce mixture into the skillet, stirring to coat the chicken and vegetables evenly. Cook for another 2-3 minutes until the sauce thickens slightly.

  7. 7

Serve the honey garlic chicken stir-fry over cooked rice.
