Honey Garlic Chicken Stir-Fry with Seasonal Vegetables

  • (1 pound) chicken breast, sliced into thin strips
  • (1/4 cups) honey
  • (1/4 cups) soy sauce
  • (2 tablespoons) vegetable oil
  • (1 tablespoon) minced garlic
  • (1 tablespoon) minced fresh ginger
  • (1) bell pepper, sliced
  • (1) zucchini, sliced
  • (1 cup) broccoli florets
  • (1) carrot, julienned
  • (1/4 cups) green onions, chopped
  • (1 tablespoon) sesame seeds (optional)
  • Salt and pepper to taste

Instructions

    In a small bowl, whisk together 1/4 cup honey, 1/4 cup soy sauce, 1 tablespoon minced garlic, and 1 tablespoon minced ginger. Set aside. Add Salt and pepper to taste.

    Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat.

    Add the sliced chicken breast (1 pound) to the skillet and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.

    Pour the honey garlic sauce over the chicken and stir to coat. Let it simmer for 2-3 minutes until the sauce thickens slightly.

    Add the sliced bell pepper (1), zucchini (1), broccoli florets (1 cup), and julienned carrot (1) to the skillet. Stir-fry for another 5-6 minutes until the vegetables are tender-crisp.
