Honey Garlic Chicken and Veggies

Ingredients
Yields 4 servings
- (4) chicken thighs, boneless and skinless
- (2 tbsp) honey
- (3 cloves) garlic, minced
- (1/4 cups) soy sauce
- (2 tbsp) olive oil
- (1) bell pepper, sliced
- (1) zucchini, sliced
- (1) carrot, julienned
- (1) onion, sliced
- (1 tsp) sesame seeds (optional)

In a small bowl, mix together (2 tbsp) honey, (3 cloves) minced garlic, (1/4 cup) soy sauce, and (1/4 tsp) black pepper to create the marinade.

Place the (4) chicken thighs in a shallow dish and pour the marinade over them. Allow to marinate for at least 30 minutes, or up to 1 hour in the refrigerator.

While the chicken is marinating, prepare the vegetables by slicing the (1) bell pepper, (1) zucchini, (1) carrot, and (1) onion.

In a large skillet, heat (2 tbsp) olive oil over medium heat. Add the marinated chicken thighs, cooking for about 6-8 minutes per side, or until cooked through and nicely caramelized.

Once the chicken is cooked, remove it from the skillet and let it rest. In the same skillet, add the prepared vegetables and sauté for about 5-7 minutes until they are tender but still crisp.

Slice the rested chicken thighs and return them to the skillet with the veggies. Drizzle any remaining marinade and toss everything together to heat through for an additional 2 minutes.

Serve hot, and sprinkle (1 tsp) sesame seeds on top if desired.
