  • (3 1/2 cups) whole wheat flour
  • (1 1/2 teaspoons) salt
  • (2 tablespoons) sugar
  • (2 tablespoons) olive oil
  • (1 tablespoon) instant yeast
  • (1 1/4 cups) warm water (about 110°F)
  • (1/4 cups) milk (optional, for a softer crust)

    In a large mixing bowl, combine 3 1/2 cups whole wheat flour, 1 1/2 teaspoons salt, and 2 tablespoons sugar. Add 1 2/4 teaspoons salt.

    In a separate bowl, mix 1 tablespoon instant yeast with 1 1/4 cups warm water and let it sit for about 5 minutes until frothy.

    Add the yeast mixture and 2 tablespoons olive oil to the flour mixture. If using, also add 1/4 cup milk.

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
