Homemade Whole Wheat Sandwich Bread

Ingredients
Yields 1 loaf
- (3 1/2 cups) whole wheat flour
- (1 1/2 teaspoons) salt
- (2 tablespoons) sugar
- (2 tablespoons) olive oil
- (1 tablespoon) instant yeast
- (1 1/4 cups) warm water (about 110°F)
- (1/4 cups) milk (optional, for a softer crust)

In a large mixing bowl, combine 3 1/2 cups whole wheat flour, 1 1/2 teaspoons salt, and 2 tablespoons sugar. Add 1 2/4 teaspoons salt.

In a separate bowl, mix 1 tablespoon instant yeast with 1 1/4 cups warm water and let it sit for about 5 minutes until frothy.

Add the yeast mixture and 2 tablespoons olive oil to the flour mixture. If using, also add 1/4 cup milk.

Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

After the dough has risen, punch it down and shape it into a loaf.

Place the shaped dough into a greased 9x5 inch loaf pan. Cover and let it rise again for about 30-45 minutes until it has risen just above the rim of the pan.

Bake the bread for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.
