Homemade Whole Wheat Pita Bread

In a small bowl, combine 1 cup warm water (110 °F) and 2 teaspoons active dry yeast. Let it sit for 5 minutes until frothy.

In a large mixing bowl, combine 2 cups whole wheat flour, 1 teaspoon salt, and 1 teaspoon sugar. Mix well.

Add the yeast mixture and 1 tablespoon olive oil to the flour mixture. Stir until a dough forms.

Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.

Preheat your oven to 475°F (245 °C) and place a baking sheet or pizza stone inside to heat.

Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a ball and then flatten it into a circle about 1/4 inch thick.

Carefully place the flattened dough onto the preheated baking sheet or pizza stone. Bake for 5-7 minutes until puffed and lightly golden.
