- (1 cup) whole wheat flour
- (1) ripe banana, mashed
- (1 cup) milk
- (2) large eggs
- (2 tbsp) honey
- (2 tbsp) baking powder
- (1/2 tsp) vanilla extract
- (1/4 tsp) salt
- (1 tbsp) vegetable oil for cooking

In a mixing bowl, combine the (1) cup whole wheat flour, (2) tbsp baking powder, and (1/4 tsp salt. Mix well.

In another bowl, whisk together the (1) ripe banana, mashed, (1) cup milk, (2) large eggs, (2 tbsp) honey, and (1/2 tsp) vanilla extract until smooth and well combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.

Heat a non-stick skillet over medium heat and add (1 tbsp) vegetable oil to coat the surface.

Using a ladle, pour about (1 /4) cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2 minutes until golden brown.
