Homemade Vegetable Fried Rice

Ingredients
Yields 4 servings
- (3 cups) cooked rice
- (1 cup) mixed vegetables (peas, carrots, corn)
- (1) onion, diced
- (2) garlic cloves, minced
- (1) bell pepper, diced
- (3 tbsp) soy sauce
- (2 tbsp) vegetable oil
- (1 egg) , beaten
- (1/2 tsp) sesame oil
- (1/4 tsp) black pepper
- (1/4 tsp) salt
- (2) green onions, chopped
Instructions

In a large skillet or wok, heat (2 tbsp) vegetable oil over medium heat.

Add (1) diced onion and sauté until translucent, about 3-4 minutes.

Stir in (2) minced garlic cloves and (1) diced bell pepper, cooking for another 2 minutes until fragrant.

Add (1 cup) mixed vegetables to the skillet, cooking until tender, about 5 minutes.

Push the vegetables to one side of the skillet and pour in the (1) beaten egg. Scramble the egg until fully cooked, then mix with the vegetables.

Add (3 cups) cooked rice to the skillet and combine everything thoroughly.

Pour in (3 tbsp) soy sauce, (1/2 tsp) sesame oil, (1/4 tsp) black pepper, and (1/4 tsp) salt. Stir-fry for about 5 minutes to heat the rice through and combine flavors.
