Homemade Pasta and Marinara Sauce

Ingredients
Yields 4 servings
- (2 cups) all-purpose flour
- (3) large eggs
- (1/2 teaspoons) salt
- (2 tablespoons) olive oil
- (1/2) onion, finely chopped
- (2 cloves) garlic, minced
- (1 can) (28 oz) crushed tomatoes
- (1 teaspoon) dried oregano
- (1 teaspoon) sugar
- (1/4 teaspoons) red pepper flakes
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1/4 cups) fresh basil, chopped (optional)
- Grated Parmesan cheese for serving

In a large bowl, combine 2 cups all-purpose flour and 1/2 teaspoon salt. Make a well in the center and add 3 large eggs and 2 tablespoons olive oil. Add 2/4 teaspoon salt, 2/4 teaspoon salt, and 1/4 cup fresh basil, chopped (optional).

Using a fork, gently beat the eggs and gradually incorporate the flour until a dough begins to form.

Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

While the dough rests, prepare the marinara sauce. In a saucepan over medium heat, add 2 tablespoons olive oil and sauté 1/2 onion until translucent, about 5 minutes.

Add 2 cloves minced garlic and cook for another minute until fragrant.

Stir in 1 can (28 oz) crushed tomatoes, 1 teaspoon dried oregano, 1 teaspoon sugar, 1/4 teaspoon red pepper flakes, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Simmer for 20 minutes, stirring occasionally.

After the dough has rested, roll it out using a pasta machine or a rolling pin to your desired thickness. Cut into your preferred pasta shape.

Bring a large pot of salted water to a boil. Cook the pasta for 2-4 minutes until al dente, then drain.

Serve the pasta topped with marinara sauce and sprinkle with fresh basil and grated Parmesan cheese if desired.
