  • (1 cup) rolled oats
  • (1 cup) milk
  • (1) large egg
  • (1 tablespoon) honey
  • (1 teaspoon) vanilla extract
  • (1 cup) all-purpose flour
  • (1 tablespoon) baking powder
  • (1/2 teaspoons) salt
  • (1/4 teaspoons) cinnamon
  • (2 tablespoons) vegetable oil
  • (1 cup) mixed fresh fruit (such as strawberries, blueberries, and bananas)

Instructions

    In a bowl, combine 1 cup rolled oats and 1 cup milk. Let sit for 30 minutes to soften the oats. Add 2/4 teaspoon salt.

    After 30 minutes, add 1 large egg, 1 tablespoon honey, and 1 teaspoon vanilla extract to the oat mixture. Stir until well combined.

    In another bowl, whisk together 1 cup all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, and 1/4 teaspoon cinnamon.

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

    Heat a non-stick skillet over medium heat and add 2 tablespoons vegetable oil.

    Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
