Homemade granola bars with nuts and dried fruit

Ingredients

Servings4

Yields 4 servings

  • (2 cups) rolled oats
  • (1/2 cups) honey
  • (1/4 cups) almond butter
  • (1/2 cups) mixed nuts (chopped)
  • (1/2 cups) dried fruit (chopped, such as cranberries or apricots)
  • (1/4 cups) sunflower seeds
  • (1/4 teaspoons) salt
  • (1/2 teaspoons) cinnamon (optional)

Instructions

  1. 1

    Preheat the oven to 350°F (175 °C).

  2. 2

In a large mixing bowl, combine 2 cups rolled oats, 1/4 teaspoon salt, and 1/2 teaspoon cinnamon (if using).

  3. 3

In a small saucepan over low heat, combine 1/2 cup honey and 1/4 cup almond butter. Stir until melted and well combined.

  4. 4

Pour the honey and almond butter mixture over the oat mixture and stir until everything is evenly coated.

  5. 5

Add 1/2 cup mixed nuts, 1/2 cup dried fruit, and 1/4 cup sunflower seeds to the bowl. Mix until all ingredients are well combined.

  6. 6

Line an 8x8 inch baking dish with parchment paper and pour the granola mixture into the dish. Press down firmly to create an even layer.

  7. 7

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.

  8. 8

Remove from the oven and let cool in the pan for about 10 minutes. Then, lift the granola out using the parchment paper and let it cool completely on a wire rack.

  9. 9

Once cooled, cut into bars and store in an airtight container.
