Homemade Buttermilk Pancakes

- (1 cup) buttermilk
- (1) large egg
- (2 tablespoons) unsalted butter, melted
- (1 teaspoon) vanilla extract

In a large mixing bowl, whisk together 1 cup all-purpose flour, 2 tablespoons granulated sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt until well combined.

In a separate bowl, mix 1 cup buttermilk, 1 large egg, 2 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix. Let the batter rest for 10 minutes.

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
