- 1 tablespoonbutter, cut into small pieces
- 1 package(14 oz) refrigerated pie crusts (2 crusts)
Instructions
- 1
Preheat the oven to 425°F (220°C).
- 2
In a large bowl, combine 2 cups fresh blueberries, 3/4 cup granulated sugar, 1/4 cup all-purpose flour, 1 tablespoon lemon juice, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt. Mix gently until the blueberries are well coated. Let the mixture sit for 10 minutes to allow the juices to develop.
- 3
Roll out one of the refrigerated pie crusts and fit it into a 9-inch pie plate, pressing it gently against the bottom and sides.
- 4
Pour the blueberry mixture into the pie crust and spread it evenly. Dot the filling with 1 tablespoon butter, cut into small pieces.
- 5
Roll out the second refrigerated pie crust and place it over the blueberry filling. Seal the edges by crimping them together. Cut a few slits in the top crust to allow steam to escape.
- 6
Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.
- 7
Remove from the oven and let the pie cool for at least 15 minutes before slicing. Serve warm or at room temperature.
Chef Tip
For a sweeter pie, adjust the sugar to taste based on the sweetness of the blueberries. Serve with a scoop of vanilla ice cream for an extra treat.
