Homemade Biscuits

Ingredients
Yields 12 biscuits
- (2 cups) all-purpose flour
- (1 tablespoon) baking powder
- (1/2 teaspoons) baking soda
- (1 teaspoon) salt
- (1/4 cups) unsalted butter, cold and cubed
- (3/4 cups) buttermilk, cold
- (1 tablespoon) honey (optional)

Preheat the oven to 425°F (220 °C).

In a large mixing bowl, combine 2 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, and 1 teaspoon salt. Mix well.

Add 1/4 cup cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Make a well in the center and pour in 3/4 cup cold buttermilk and 1 tablespoon honey (if using). Stir until just combined; do not overmix.

Turn the dough out onto a lightly floured surface and gently knead it 3-4 times until it comes together. Pat it into a rectangle about 1 inch thick.

Using a biscuit cutter, cut out biscuits and place them on a baking sheet lined with parchment paper. Gather scraps and repeat until all dough is used.

Bake in the preheated oven for 12-15 minutes or until the tops are golden brown.
