Homemade Bagels

Ingredients
Yields 1 loaf
- (4 cups) all-purpose flour
- (1 tablespoon) sugar
- (1 tablespoon) salt
- (1 tablespoon) active dry yeast
- (1 1/2 cups) warm water (110°F)
- (1 tablespoon) baking soda
- (1 egg) (for egg wash)
- Sesame seeds (for topping)
- Poppy seeds (for topping)

In a large bowl, combine 4 cups all-purpose flour, 1 tablespoon sugar, and 1 tablespoon salt. Mix well.

In a separate bowl, dissolve 1 tablespoon active dry yeast in 1 1/2 cups warm water. Let it sit for 5 minutes until foamy.

Add the yeast mixture to the flour mixture and stir until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.

Preheat your oven to 425°F (220 °C).

Punch down the risen dough and divide it into 8 equal pieces. Shape each piece into a ball and poke a hole in the center to form a bagel shape.

Bring a large pot of water to a boil and add 1 tablespoon baking soda.

Boil the bagels in batches for about 1 minute on each side, then remove and place on a baking sheet lined with parchment paper.

Beat 1 egg and brush it over the bagels. Sprinkle with sesame seeds or poppy seeds if desired.

Bake the bagels in the preheated oven for 20-25 minutes until golden brown.
