- (1 lb) boneless, skinless chicken breast
- (1/4 cups) soy sauce
- (1/4 cups) vegetable oil
- (2 tablespoons) sesame oil
- (2 tablespoons) rice vinegar
- (2 tablespoons) honey
- (2 cloves) garlic, minced
- (1 teaspoon) ground ginger
- (1 teaspoon) black pepper
- (1/2 teaspoons) salt
- (2 cups) mixed vegetables (zucchini, bell peppers, and onions)
- (4 cups) cooked rice
- (2) green onions, chopped for garnish
Instructions
- 1
In a bowl, mix together 1/4 cup soy sauce, 1/4 cup vegetable oil, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, 2 tablespoons honey, 2 cloves minced garlic, 1 teaspoon ground ginger, 1 teaspoon black pepper, and 1/2 teaspoon salt to create the marinade.
- 2
Cut 1 lb boneless, skinless chicken breast into bite-sized pieces and add to the marinade. Mix well and let it marinate for at least 30 minutes in the refrigerator.
- 3
Heat a large skillet or grill over medium-high heat. Once hot, add the marinated chicken pieces (reserve the marinade) and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
- 4
Add the mixed vegetables (2 cups) to the skillet with the chicken and stir-fry for an additional 5 minutes until the vegetables are tender but still crisp.
- 5
Pour the reserved marinade over the chicken and vegetables, cooking for another 2-3 minutes until heated through.
- 6
Serve the hibachi chicken over 4 cups of cooked rice and garnish with chopped green onions (2) before serving.
