Herb and Cheese Dinner Rolls

Ingredients

- (2 teaspoons) instant yeast
- (1 teaspoon) salt
- (1 tablespoon) sugar
- (1 1/2 cups) warm water (110°F)
- (1/4 cups) olive oil
- (1 cup) shredded cheese (cheddar or mozzarella)
- (2 tablespoons) fresh parsley, chopped
- (1 tablespoon) fresh rosemary, chopped
- (1 tablespoon) fresh thyme, chopped
- (1 egg) (for egg wash)

In a large mixing bowl, combine 4 cups all-purpose flour, 2 teaspoons instant yeast, 1 teaspoon salt, and 1 tablespoon sugar. Add 1 tablespoon fresh thyme, chopped.

Add 1 1/2 cups warm water and 1/4 cup olive oil to the dry ingredients. Mix until a sticky dough forms.

Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Once risen, punch down the dough and knead in 1 cup shredded cheese, 2 tablespoons chopped parsley, 1 tablespoon chopped rosemary, and 1 tablespoon chopped thyme until evenly distributed.

Divide the dough into 12 equal pieces and shape each piece into a ball.

Place the rolls on a greased baking sheet, cover with a cloth, and let rise for another 30 minutes.

Beat 1 egg and brush it over the tops of the rolls for a golden finish.
