Ingredients

Servings4

Yields 12 biscuits

  • (2 cups) all-purpose flour
  • (1 tablespoon) baking powder
  • (1/2 teaspoons) salt
  • (1/4 teaspoons) black pepper
  • (1/2 cups) unsalted butter, cold and cubed
  • (3/4 cups) shredded cheddar cheese
  • (1/4 cups) grated Parmesan cheese
  • (1/4 cups) fresh chives, chopped
  • (1/4 cups) fresh parsley, chopped
  • (3/4 cups) buttermilk

Instructions

  1. 1

    Preheat the oven to 425°F (220 °C).

  2. 2

In a large mixing bowl, combine 2 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add 2/4 teaspoon salt.

  3. 3

Add 1/2 cup cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  4. 4

Stir in 3/4 cup shredded cheddar cheese, 1/4 cup grated Parmesan cheese, 1/4 cup chopped fresh chives, and 1/4 cup chopped fresh parsley until evenly distributed.

  5. 5

Pour in 3/4 cup buttermilk and mix until just combined. Do not overmix; the dough should be slightly sticky.

  6. 6

Turn the dough out onto a floured surface and gently knead it a few times until it holds together. Pat the dough into a 1-inch thick rectangle.

  7. 7

Cut the dough into rounds using a biscuit cutter or a glass, and place them on a baking sheet lined with parchment paper, about 1 inch apart.

  8. 8

Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown.

  9. 9

Remove from the oven and let cool for a few minutes before serving.
