Ingredients
Yields 4 servings
- (1/2 cups) chia seeds
- (2 cups) almond milk (or any milk of choice)
- (2 tbsp) maple syrup
- (1 tsp) vanilla extract
- (1 cup) mixed fresh fruits (such as berries, banana, and kiwi)
- (1/4 tsp) salt
- (2 tbsp) nuts or seeds for topping (optional)
Instructions
- 1
In a large mixing bowl, combine (1/2 cup) chia seeds, (2 cups) almond milk, (2 tbsp) maple syrup, (1 tsp) vanilla extract, and (1/4 tsp) salt. Mix well until all ingredients are combined and the chia seeds are evenly distributed.
- 2
Cover the bowl and refrigerate for at least 60 minutes, or overnight if preferred, to allow the chia seeds to expand and create a pudding-like consistency.
- 3
Before serving, stir the pudding to break up any clumps that may have formed.
- 4
Divide the chia pudding into four bowls or jars and top each with (1 cup) mixed fresh fruits. You can choose your favorite fruits such as berries, sliced bananas, or diced kiwi.
- 5
If desired, sprinkle (2 tbsp) nuts or seeds on top for added crunch and nutrition.
