- (1 cup) cooked rice
- (1 cup) cherry tomatoes, halved
- (1) cucumber, diced
- (1/2 cups) plain yogurt
- (1 tbsp) lemon juice
- (1 tbsp) olive oil
Instructions
- 1
In a large bowl, combine 1 lb ground beef, 1 small onion (finely chopped), 2 cloves garlic (minced), 1 tsp ground cumin, 1 tsp paprika, 1/2 tsp salt, 1/2 tsp black pepper, and 1/4 tsp cayenne pepper. Mix well until fully combined.
- 2
Form the beef mixture into 8 equal-sized kebabs.
- 3
Preheat a grill or grill pan over medium-high heat. Cook the kebabs for about 8-10 minutes, turning occasionally, until fully cooked and browned.
- 4
While the kebabs are cooking, prepare the salad by combining 1 cup cherry tomatoes (halved), 1 cucumber (diced), and 1/4 cup fresh parsley (chopped) in a bowl. Drizzle with 1 tbsp olive oil and toss to combine.
- 5
In a small bowl, mix together 1/2 cup plain yogurt and 1 tbsp lemon juice for the sauce.
- 6
To assemble the bowls, place 1 cup cooked rice in each bowl, top with 2 kebabs, and add a generous portion of the salad. Drizzle with the yogurt sauce before serving.
