Grilled Veggie and Hummus Wraps

Ingredients

- (2) bell peppers
- (1) zucchini
- (1) yellow squash
- (1) red onion
- (2 tbsp) olive oil
- (1 tsp) salt
- (1/2 tsp) black pepper
- (4) large whole wheat tortillas
- (1 cup) hummus
- (1/4 cups) fresh spinach leaves

Preheat your grill to medium-high heat.

Slice the (2) bell peppers, (1) zucchini, (1) yellow squash, and (1) red onion into thin strips.

In a bowl, toss the sliced vegetables with (2 tbsp) olive oil, (1 tsp) salt, and (1/2 tsp) black pepper until evenly coated.

Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Remove the grilled vegetables from the grill and let them cool slightly.

Take a large whole wheat tortilla and spread (1/4 cup) hummus evenly over the entire surface.

Layer a handful of fresh spinach leaves on top of the hummus, followed by a generous portion of the grilled vegetables.

Roll the tortilla tightly, folding in the sides as you go to secure the filling. Repeat this process for the remaining tortillas.
