Ingredients
Yields 4 servings
- (2) chicken breasts
- (1) avocado
- (4 cups) mixed salad greens
- (1) cucumber
- (1) bell pepper
- (1/4 cups) red onion
- (1/4 cups) olive oil
- (2 tbsp) fresh lemon juice
- (1 tbsp) orange juice
- (1 tsp) honey
- (1/2 tsp) salt
- (1/4 tsp) black pepper
Instructions
- 1
Preheat the grill to medium-high heat.
- 2
Season the (2) chicken breasts with (1/2 tsp) salt and (1/4 tsp) black pepper.
- 3
Grill the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F. Remove from grill and let rest before slicing.
- 4
While the chicken is grilling, prepare the salad. Start by chopping the (1) cucumber and slicing the (1) bell pepper and (1/4 cup) red onion into thin strips.
- 5
In a large bowl, combine the (4 cups) mixed salad greens, chopped cucumber, sliced bell pepper, and sliced red onion.
- 6
In a small bowl, whisk together the (1/4 cup) olive oil, (2 tbsp) fresh lemon juice, (1 tbsp) orange juice, (1 tsp) honey, and remaining (1/2 tsp) salt to create the citrus dressing.
- 7
Once the chicken has rested, slice it into strips and add it to the salad bowl.
- 8
Cut the (1) avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado and add it to the salad.
- 9
Drizzle the citrus dressing over the salad and toss gently to combine all ingredients.
