Garlic Herb Salmon with Veggies

Ingredients
Yields 4 servings
- (4) salmon fillets
- (4 cloves) garlic, minced
- (1/4 cups) olive oil
- (2 tbsp) fresh parsley, chopped
- (1 tbsp) fresh dill, chopped
- (1 tsp) lemon juice
- (3/4 tsp) salt
- (1/4 tsp) black pepper
- (2) zucchini, sliced
- (2) bell peppers, cut into strips
- (1) red onion, cut into wedges
- (1) lemon, sliced (for garnish)

In a small bowl, combine (4 cloves) garlic, (1/4 cup) olive oil, (2 tbsp) parsley, (1 tbsp) dill, (1 tsp) lemon juice, (3/4 tsp) salt, and (1/4 tsp) black pepper to create a marinade.

Place the (4) salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 20 minutes.

Preheat the oven to 400°F (200 °C).

On a baking sheet, arrange the (2) zucchini, (2) bell peppers, and (1) red onion. Drizzle with a little olive oil and sprinkle with salt and pepper. Toss to coat evenly.

Push the veggies to one side of the baking sheet and place the marinated salmon fillets on the other side. Top each fillet with a slice of lemon.

Roast in the oven for about 25-30 minutes or until the salmon is cooked through and flakes easily with a fork.

Remove from the oven and let rest for a few minutes before serving. Garnish with additional parsley if desired.
