- (2 pounds) baby potatoes
- (1/4 cups) olive oil
- (1 tablespoon) minced garlic
- (1 tablespoon) fresh rosemary, chopped
- (1 tablespoon) fresh thyme, chopped
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper

Preheat the oven to 400°F (200 °C).

Wash and scrub 2 pounds of baby potatoes, then cut them in half if they are large.

In a large bowl, combine 1/4 cup olive oil, 1 tablespoon minced garlic, 1 tablespoon chopped fresh rosemary, 1 tablespoon chopped fresh thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Add 1 tablespoon fresh thyme, chopped and 2/4 teaspoon black pepper.

Add the halved baby potatoes to the bowl and toss until they are evenly coated with the herb and oil mixture.

Spread the potatoes in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
