Ingredients
Yields 4 servings
- (4) chicken breasts (about 6 oz each)
- (1 lb) asparagus, trimmed
- (4 cloves) garlic, minced
- (1/4 cups) olive oil
- (2 tsp) dried thyme
- (2 tsp) dried rosemary
- (1 tsp) salt
- (1/2 tsp) black pepper
- (1) lemon, juiced
- (1/4 cups) grated Parmesan cheese (optional)
Instructions
- 1
Preheat the oven to 400°F (200 °C).
- 2
In a small bowl, mix together 1/4 cup olive oil, 4 cloves minced garlic, 2 tsp dried thyme, 2 tsp dried rosemary, 1 tsp salt, and 1/2 tsp black pepper.
- 3
Place the 4 chicken breasts in a large bowl and pour the garlic herb mixture over them. Toss to coat the chicken evenly and let it marinate for 15 minutes.
- 4
While the chicken is marinating, prepare the asparagus by placing it on a baking sheet. Drizzle with 1 tbsp olive oil, sprinkle with salt and pepper, and toss to coat.
- 5
After the chicken has marinated, place it on the same baking sheet with the asparagus, ensuring they are spaced out evenly.
- 6
Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75 °C) and the asparagus is tender.
- 7
Remove from the oven and squeeze the juice of 1 lemon over the chicken and asparagus. If desired, sprinkle with 1/4 cup grated Parmesan cheese before serving.
